Ingredients

Serves 4

  • Quinoa ,rinsed nicely 1/2 cups

  • mint, finely chopped 3-4 sprig

  • Flat leaf parsley finely chopped 1/2 cups

  • Onion, small finely chopped 1 nos

  • Tomato small finely chopped 1 nos

  • Cucumber finely chopped 1 nos

  • Olive oil 1 tbsp

  • Salt or as per taste 1/2 tsp

  • Clove of garlic finely chopped 1 nos

Directions

    Heat 1/2 tablespoon olive oil in a pan and saute quinoa well

  • 02

    Add 1/2 cup water to the quinoa and salt and bring to boil

  • 03

    Cook on slow till quinoa is soft. Keep aside to cool

  • 04

    Once quinoa is cooled fluff it up with a fork . Add parsley, cucumber, tomatoes, mint, onions, garlic, lemon juice and remaining olive oil.

    Toss well and serve.
