Quinoa Tabbouleh Salad

Ingredients

1/2 cups quinoa ,rinsed nicely
3-4 sprig mint, finely chopped
1/2 cups flat leaf parsley finely chopped
1 nos onion, small finely chopped
1 nos tomato small finely chopped
1 nos cucumber finely chopped
1 tbsp olive oil
1/2 tsp salt or as per taste
1 nos clove of garlic finely chopped
Directions
Heat 1/2 tablespoon olive oil in a pan and saute quinoa well
Add 1/2 cup water to the quinoa and salt and bring to boil
Cook on slow till quinoa is soft. Keep aside to cool
Once quinoa is cooled fluff it up with a fork . Add parsley, cucumber, tomatoes, mint, onions, garlic, lemon juice and remaining olive oil.
Toss well and serve.
