Ingredients

Serves : 4
  • 1/2 cups quinoa ,rinsed nicely


  • 3-4 sprig mint, finely chopped


  • 1/2 cups flat leaf parsley finely chopped


  • 1 nos onion, small finely chopped


  • 1 nos tomato small finely chopped


  • 1 nos cucumber finely chopped


  • 1 tbsp olive oil


  • 1/2 tsp salt or as per taste


  • 1 nos clove of garlic finely chopped

Directions

  • Heat 1/2 tablespoon olive oil in a pan and saute quinoa well
  • Add 1/2 cup water to the quinoa and salt and bring to boil
  • Cook on slow till quinoa is soft. Keep aside to cool
  • Once quinoa is cooled fluff it up with a fork . Add parsley, cucumber, tomatoes, mint, onions, garlic, lemon juice and remaining olive oil.
  • Toss well and serve.
