Ingredients
Serves 4
Quinoa ,rinsed nicely 1/2 cups
mint, finely chopped 3-4 sprig
Flat leaf parsley finely chopped 1/2 cups
Onion, small finely chopped 1 nos
Tomato small finely chopped 1 nos
Cucumber finely chopped 1 nos
Olive oil 1 tbsp
Salt or as per taste 1/2 tsp
Clove of garlic finely chopped 1 nos
Directions
Heat 1/2 tablespoon olive oil in a pan and saute quinoa well
Add 1/2 cup water to the quinoa and salt and bring to boil
Cook on slow till quinoa is soft. Keep aside to cool
Once quinoa is cooled fluff it up with a fork . Add parsley, cucumber, tomatoes, mint, onions, garlic, lemon juice and remaining olive oil.
Toss well and serve.
