Unsalted butter 1 cup
Palm sugar 1cup
Homade spiced wine 3 tablespoon
Juice and zest of 1 orange
Juice of 1 lemon
Nuts(Almond, walnut, hazelnut and cashew) 1 cup coarsely chopped
Dried fruits chopped into bite size (prunes, figs, raisins, sultanas and candied peel) 600 grams. All soaked a month before in homemade spiced wine
All purpose flour 2 cups
Almond flour 3/4cup
Baking powder 1 teaspoon
Salt 1/2 teaspoon
Preheat oven to 160 degrees centigrade.
Sift all purpose flour and baking powder together and mix well with almond flour.
Remove 3 to 4 tablespoon of flour mixture and add it to the dried fruits and nuts and toss well. This helps the soaked dried fruits sticking to one another.
In a bowl beat butter till creamy. Add sugar and beat till light and fluffy. Add egg one by one and beat well. Add juice of orange, lemon zest and spiced wine and mix well.
Fold in all chopped nuts and soaked dried fruits.Mix well. Lastly add in flour mixture and fold well.
Transfer the fruit batter to a well greased spring form pan placing parchment paper. Place Almond flakes on top as shown..
Bake in a preheated oven for 1 hour. Reduce the oven temperature to 150 degrees centigrade and continue to bake for about 80 to 90 minutes. Insert a skewer to check the doness of the cake.
Remove the cake from pan and cool it on a wired rack.
Fruit and Nut cake (Christmas Cake) is ready to consume.
Usually Christmas cake is aged by feeding alcohol alternate days. For Immediate consume this step is not followed. It's purely optional.
