Heat a pan with 1 tsp of oil in it.
Temper fenugreek seeds and add all the ingredients except water
Sauté everything for 5-7 minutes stirring it 3-4 times.
Add water and boil covering with a lid for approximately 8 minutes.
Boil in medium flame till the vegetables are cooked.
Sprinkle chopped coriander leaves and off the flame.
Let it rest for 5 minutes and then serve hot with plain rice or the way you like to have them.
You can have it as a soup too.
