Ingredients

Serves 3

  • spinach chopped 3 cups

  • tender broad beans 1 cups

  • ginger cut into pieces 3-4 nos

  • bottle gourd cut into pieces 1 cups

  • potato cut into pieces (optional) 1 nos

  • fenugreek seeds 1/2 tsp

  • salt 1 tsp

  • turmeric powder 1/3 tsp

  • water 4 cups

  • vegetable oil 1 tsp

  • grated ginger 1/2 tsp

  • cumin powder 1/2 tsp

  • coriander powder 1/2 tsp

  • chopped fresh coriander leaves 1 tsp

Directions

    Heat a pan with 1 tsp of oil in it.

    Temper fenugreek seeds and add all the ingredients except water

  • 03

    Sauté everything for 5-7 minutes stirring it 3-4 times.

    Add water and boil covering with a lid for approximately 8 minutes.

    Boil in medium flame till the vegetables are cooked.

    Sprinkle chopped coriander leaves and off the flame.

  • 07

    Let it rest for 5 minutes and then serve hot with plain rice or the way you like to have them.

    You can have it as a soup too.
