spinach chopped 3 cups
tender broad beans 1 cups
ginger cut into pieces 3-4 nos
bottle gourd cut into pieces 1 cups
potato cut into pieces (optional) 1 nos
fenugreek seeds 1/2 tsp
salt 1 tsp
turmeric powder 1/3 tsp
water 4 cups
vegetable oil 1 tsp
grated ginger 1/2 tsp
cumin powder 1/2 tsp
coriander powder 1/2 tsp
chopped fresh coriander leaves 1 tsp
Heat a pan with 1 tsp of oil in it.
Temper fenugreek seeds and add all the ingredients except water
Sauté everything for 5-7 minutes stirring it 3-4 times.
Add water and boil covering with a lid for approximately 8 minutes.
Boil in medium flame till the vegetables are cooked.
Sprinkle chopped coriander leaves and off the flame.
Let it rest for 5 minutes and then serve hot with plain rice or the way you like to have them.
You can have it as a soup too.
