Ingredients

Serves : 3
  • 3 cups spinach chopped


  • 1 cups tender broad beans


  • 3-4 nos ginger cut into pieces


  • 1 cups bottle gourd cut into pieces


  • 1 nos potato cut into pieces (optional)


  • 1/2 tsp fenugreek seeds


  • 1 tsp salt


  • 1/3 tsp turmeric powder


  • 4 cups water


  • 1 tsp vegetable oil


  • 1/2 tsp grated ginger


  • 1/2 tsp cumin powder


  • 1/2 tsp coriander powder


  • 1 tsp chopped fresh coriander leaves

Directions

  • Heat a pan with 1 tsp of oil in it.
  • Temper fenugreek seeds and add all the ingredients except water
  • Sauté everything for 5-7 minutes stirring it 3-4 times.
  • Add water and boil covering with a lid for approximately 8 minutes.
  • Boil in medium flame till the vegetables are cooked.
  • Sprinkle chopped coriander leaves and off the flame.
  • Let it rest for 5 minutes and then serve hot with plain rice or the way you like to have them.
  • You can have it as a soup too.
