Black Rice Chicken Risotto

Ingredients

Serves 2

  • Black Rice soaked overnight 1 cups

  • boneless chicken cubes 100 gms

  • Olive oil 4 tbsp

  • butter 1 tbsp

  • grated parmesan cheese 2 tbsp

  • onion sliced 1 nos

  • garlic cloves chopped 2 nos

  • Pepper powder 1/2 tsp

  • Dried basil or as per taste for seasoning 1/4 tsp

  • Salt or as per taste 1 tsp

  • water or more as required 2 cups

Directions

    Heat a pan and add 2 tbsps Olive oil

  • 02

    Add sliced onion and saute till onion turns soft.

  • 03

    Add the soaked black rice and saute for about 5 mins stirring it continously.

  • 04

    Add 1 cup water at a time and continue to cook till the rice is cooked and water dries up. But the rice should not be over cooked. It took 20-25 mins for me. Cooking time may differ.

    Meanwhile the rice is cooking we will make the chicken ready.

    Heat a pan and add 2 tbsps Olive oil.

    Add the chopped garlic and saute for a min

  • 08

    Add the chicken cubes, pepper powder, salt to taste, season with dried basil and stir fry for 8-10 mins till golden.

    Once the rice is cooked add the chicken, butter, grated parmesan cheese, mix well and serve.
