Black Rice Chicken Risotto

  • 1 cups black rice soaked overnight

  • 100 gms boneless chicken cubes

  • 4 tbsp olive oil

  • 1 tbsp butter

  • 2 tbsp grated parmesan cheese

  • 1 nos onion sliced

  • 2 nos garlic cloves chopped

  • 1/2 tsp pepper powder

  • 1/4 tsp dried basil or as per taste for seasoning

  • 1 tsp salt or as per taste

  • 2 cups water or more as required


  • Heat a pan and add 2 tbsps Olive oil
  • Add sliced onion and saute till onion turns soft.
  • Add the soaked black rice and saute for about 5 mins stirring it continously.
  • Add 1 cup water at a time and continue to cook till the rice is cooked and water dries up. But the rice should not be over cooked. It took 20-25 mins for me. Cooking time may differ.
  • Meanwhile the rice is cooking we will make the chicken ready.
  • Heat a pan and add 2 tbsps Olive oil.
  • Add the chopped garlic and saute for a min
  • Add the chicken cubes, pepper powder, salt to taste, season with dried basil and stir fry for 8-10 mins till golden.
  • Once the rice is cooked add the chicken, butter, grated parmesan cheese, mix well and serve.
