Ingredients

Serves : 2
  • 1/2 cups meal maker or soya chunks (soaked in warm water for 15 minutes.


  • 2 nos onions, shredded.


  • 2 nos green chillies, finely chopped.


  • 1/4 inch ginger, finely chopped.


  • 1 nos carrot, diced.


  • 1 nos beetroot, diced.


  • 2 tbsp oil


  • 1/2 tsp fennel seeds.


  • 1/2 tsp bengal gram dal.


  • 2 tbsp roasted groundnuts.


  • 1/2 tsp turmeric powder.


  • 1/2 tsp coriander powder.


  • 1/2 tsp cumin seeds


  • 1/2 tsp garam masala powder.


  • 1 tsp lemon juice.


  • 2 nos tomato, finely chopped.


  • 4 nos garlic, finely chopped.


  • 1/4 cups coriander leaves, finely chopped.


  • 1 tsp salt.


  • 1 tsp mustard seeds.

Directions

  • Drain water from Meal maker or soya chunks, squeeze out water and set aside.
  • In a kadai add oil, when hot add mustard seeds, after it crackles, add cumin seeds, fennel seeds, and bengal gram dal and saute for a few minutes.
  • Then add roasted groundnuts and saute till it turns light golden in colour.
  • Then add the chopped onion, green chillies, ginger, and garlic and fry for 2 minutes.
  • Then add chopped tomatoes and saute till the tomatoes get cooked well.
  • Then add the spices, turmeric powder, coriander powder, and garam masala powder. Now fry for a 10-20 seconds.
  • Now add the chopped vegetables, you can saute for 2 minutes then add 1/2 cup of water and let the vegetables get cooked well.
  • Now add lemon juice.
  • Then add soaked Meal maker or soya chunks.
  • Add salt to taste. Transfer the contents to a serving bowl and garnish with coriander leaves.
  • Serve with tomato sauce or coconut chutney.
