Drain water from Meal maker or soya chunks, squeeze out water and set aside.
In a kadai add oil, when hot add mustard seeds, after it crackles, add cumin seeds, fennel seeds, and bengal gram dal and saute for a few minutes.
Then add roasted groundnuts and saute till it turns light golden in colour.
Then add the chopped onion, green chillies, ginger, and garlic and fry for 2 minutes.
Then add chopped tomatoes and saute till the tomatoes get cooked well.
Then add the spices, turmeric powder, coriander powder, and garam masala powder. Now fry for a 10-20 seconds.
Now add the chopped vegetables, you can saute for 2 minutes then add 1/2 cup of water and let the vegetables get cooked well.
Now add lemon juice.
Then add soaked Meal maker or soya chunks.
Add salt to taste. Transfer the contents to a serving bowl and garnish with coriander leaves.
Serve with tomato sauce or coconut chutney.
