Take a pan add ghee and the carrots and stir with a wooden spatula . Saute for 5 - 10 minutes over low heat till the raw smell of the carrots disappears and slightly change the colour .
Now add the grated coconut and stir fry for a minutes .
Now add the thick milk and stir continuously and cover the lid and cook for 5 - 7 minutes .
After 7 minutes unlid the cover and stir continuously again add milkmade and grated khoya .
Add the dry fruits and mix well , when the mixture will not stick to the pan any more or will leave the pan smoothly add 1teaspoon rose water mix well and switch off the flame .
Brush or greased a bowl with a ghee and pour the mixture into the bowl . level it with a spatula then spread grated khoya and sprinkle dry fruits .
Refrigerated the Fudge for about half an hour and then cut into pieces and serve with Choco balls and almond .
