Ingredients

Serves : 5
  • 2 cups milk


  • 1 tbsp cornflour


  • 1 tbsp vanilla custard powder


  • 200 gms sweetened condense milk


  • 1 tsp vanilla essence


  • 15 nos figs


  • 1 cups heavy cream


  • 2 tbsp honey


  • 1/2 cups water

Directions

  • In half cup water boil the figs till all the water dries up and figs soften. Let cool.
  • In a heavy bottom pan take the milk but keep 1/4th cup aside. When milk heats up, mix the cornflour and custard powder with the remaining milk, stir and mix with the rest of the milk.
  • Add the Condense milk and stir until the mixture thickens
  • Strain the mixture and add the honey and vanilla to it
  • In a mixer add the figs and 2 tbsp cream and pulse till the figs grind coarsely
  • Add the rest of the cream and pulse for a few seconds till the cream thickens
  • Fold in the cream mixture in the cool Condense milk mixture
  • Transfer to an airtight container and freeze
  • In about 2 hours take out the ice cream and beat well with a beater. Repeat this step 2 more times at an interval of 90 minutes. This step ensures smooth and creamy ice cream and will break the ice crystals, if any
  • After the third beating let the ice cream freeze well. Serve when set completely. You could drizzle some more honey. Or caramelize almonds in honey and sprinkle over the ice cream or just eat as it is
