Description

My son is mad about Jello.Other than chocolate cake he only like jello poke cake which is absolutely very delicious, tender and easy to made. Last time I made that cake believe me I didn't get time to shoot a picture its gone. This time I hide it and able to shoot some picture for blog. For this recipe first we need to make a sponge cake then poke it with a chopstick and pour jello then refrigerate to set. I use some vanilla butter cream for frosting and chopped nuts for garnishing. Fresh fruits, chocolate cream or any other garnishing can be used as per choice.

Ingredients

Serves : 6
  • 1 1/2 cups for making cake: all purpose flour


  • 1/2 cups soft butter


  • 1 cups sugar


  • 2 nos large eggs


  • 1/2 cups whole milk


  • 1/4 tsp salt


  • 1/2 tsp vanilla extract


  • 1 nos strawberry jello box (any flavor will do)


  • 1 cups boiling water


  • 1 1/2 cups for frosting:powdered sugar


  • 1/2 tbsp milk ,more if needed


  • 1/6 cups soft butter(not runny)


  • 1/2 tsp vanilla extract


  • 1 cups chopped pecan and walnut for garnishing

Directions

  • Preheat oven to 400 degrees F.
  • in a mixing bowl shift flour,baking powder and salt.
  • In an another bowl add soft butter and sugar and whisk with a spatula or use an electric mixer set on low speed. Make it soft and fluffy then add eggs(one at a time), add vanilla extract and milk and beat on high speed for 2 minutes.
  • Grease a 8 inch round cake pan and dust with flour,Pour cake batter and bake for 30 - 35 minutes or the skewer inserted came out clean. Cool cake in a pan for 5 minutes then place it in a wire rack and cool completely.
  • Using a chopstick or wooden spoon heat poke all over the cake
  • Mix jello powder in 1 cup boiling water until dissolves. Carefully pour the liquid all over the cake. Cover and place it in refrigerator for 3 hours to set.
  • Meanwhile make the frosting. In a bowl whisk powdered sugar and butter with spoon or electric mixer on low speed. Stir in vanilla and 1/2 tablespoon milk.
  • After the cake is set smear vanilla frosting on top add chopped nuts on top. Jello poke cake is ready to serve.
