Ingredients

Serves 2

  • Boiled rice 11/2 cups

  • Corn kernels 1/2 cups

  • Bell peppers( green, yellow, red) each 1/4 cups

  • Carrots finely chopped 1/4 cups

  • Spring onion whites 1/4 cups

  • Spring onion leaves finely chopped 2 tbsp

  • Garlic finely chopped 1 tbsp

  • Salt 1/2 tsp

  • Black pepper powder 1 tsp

  • Soya sauce 1 tbsp

  • Olive oil 2 tbsp

Directions

    Heat oil in a wok, add chopped garlic cloves and toss for few seconds.

  • 02

    Add spring onion leaves,corn kernels,bell peppers and carrots and toss on high flames till the veggies get crisp and cooked.

    Add salt and black pepper powder and mix well.

  • 04

    Add soya sauce and mix again.

  • 05

    Finally add the boiled rice ( you can even use leftover rice) and toss well.
