First of all for banoffee pie we need to make toffee i.e. Dulce De Leche. For this take 4 to 5 cups of water which should be enough to nicely submerge the packed condensed milk can into a pressure cooker. Close the pressure cooker with can of condensed milk into the water and cook at high flame for two whistles after that sim the flame and cook for another 25 minutes.
Remove pressure cooker from flame and let it cool by itself. Once the pressure cooker is at room temperature, take the can out of the cooker and let it cool before opening. I am attaching a picture of prepared Dulce De Leche by this procedure.
Crush the biscuits in a bowl till all are powdered well. Add butter into it and mix well. Spread this mixture into a 7 inch tart pan. Press it well into the tart pan. Press sides witb the fingers. Now keep this layer of biscuits into the refrigerator to set for 20 minutes. See picture.
Whip all the cream in a bowl till soft but stiff peaks are formed. Keep aside. Take two bananas and slice them. Take out the tart pan and cover the tart pan with a layer of sliced bananas. Refer attached picture for detail.
Now scoop out Dulce De Leche and spread to make a layer over tha layer of bananas like seen in the attached picture.
Now finally spread a layer of whipped cream over it. It can be spread with a spatula or use some piping bag and nozzles to male some design on it. I made this basket weave on my banoffee pie.
When spreading Dulce De Leche, dip a knife or spoon into hot water for few seconds and then use it to run over it to make it easy to spread. Repeat until it spreads evenly and nicely.
