RICE PEARL PUDDING

Description

" Rice pearl pudding " is inspired by a recipe from Odiya Cuisine known as "Gointha pitha". In this recipe rice flour is cooked in boiled water for few minutes, then small and tiny shape balls are made from it which is cooked in milk. I like this recipe for its innovative idea, although its preparation is time taking and boring. I am sharing is an authentic recipe, hope you all will like it.

Ingredients

Serves : 2
  • 1 litre milk


  • 1 1/2 cups rice flour


  • 1 tsp ghee


  • 1/2 cups condensed milk


  • 4 tbsp sugar


  • 2 pinch lemon yellow colour


  • 1 nos dryfruits - a handful


  • 1/4 tsp green cardamom powder


  • 1/2 tsp fennel seeds


  • 1 cups water

Directions

  • Heat water in a heavy bottom kadai. Add Fennel seeds, 2 tbsp sugar, yellow colour and ghee together in water.
  • Mix all ingredients properly till sugar dilute in water.
  • Once water reaches boiling point reduce heat, add rice flour quickly and cook for few minutes (5 minutes).
  • Cool it down in fan air. Knead this dough for at least 5 minutes with hands.
  • Now make small size balls from this dough.
  • Side by side boil milk in a heavy bottom deep pot on medium flame. Reduce flame on low heat then boil it for 15 minutes.
  • Drop rice balls and milkmaid in milk, cook it for 20 minutes on low heat.
  • Stir several times to prevent from burning.
  • Now add dryfruits, green cardamom powder and sugar (as per your preference) in milk mixture. Cook for another 5 minutes. Stir continuously. Switch off the gas stove.
  • Serve semi hot to enjoy this unique recipe.
