Ingredients

Serves : 4
  • 250 gms paneer (cottage cheese)


  • 1/2 cups fresh curd,heaped


  • 2 nos tomatoes,medium chopped


  • 1 tbsp ginger paste


  • 2 tbsp melon seeds/magaj


  • 1/4 cups cashewnuts


  • 1/4 tsp chilly powder


  • 1/4 tsp kashmiri chili powder


  • 1/2 tsp turmeric powder


  • 1/2 tsp garam masala powder


  • 1 tbsp cumin powder


  • 4 nos green cardamom


  • 6 nos cloves


  • 1 nos cardamom stick


  • 1/2 tsp cumin seeds


  • 1 tsp kasoori methi


  • 1 tsp pure ghee


  • 2 tbsp mustard /vegetable oil


  • 1 tsp sugar


  • 1 1/2 tsp salt


  • 1 1/2 cups water

Directions

  • Cut paneer pieces in cubes as per your choice. Keep aside in a bowl.
  • Take 1/2 cup water in microwave safe bowl. Put cashew nuts and melon seeds in it cook for one minute. Cool it down.
  • Keep this mixture and little water in a chutney jar, make a paste from it. Now add chopped tomato, curd, ginger paste and make a very smooth paste.
  • Heat oil and ghee together in a heavy bottom kadai on high flame. Reduce flame on medium heat, add cumin seeds, cardamon stick, green cardamom and cloves; crack for 1 minute or till aroma comes out.
  • Now add cashew paste mixture in oil, stir once. Reduce flame on low heat. Cook like this for 3 minutes. Stir several times to save from burning.
  • Add all dry spices as cumin powder, turmeric powder, both chilly powder and mix very well. Keep the lid on kadai and cook for 10 minutes or oil starts coming out.
  • It's time to add paneer, garam masala powder, sugar, and salt together and cook for another 2 min. Stir 2 times to mix very well.
  • Add 1 to 1.5 water according to your taste preference in paneer and cook for another 5 minutes on medium heat.
  • Take kasoori methi on hand and rub it between two palms then sprinkle on shahi paneer. Mix very well. Keep the lid on it.
  • Serve hot with naan, parathas, chapati, poori or fried rice according to your taste.
