Ingredients

Serves : 2
  • 8-10 nos crispy pooris


  • 2 nos potato(boiled and cubed)


  • 1 nos onion(finely chopped)


  • 1/2 nos tomato(finely chopped)


  • 8 tbsp sweet chutney(khajur imli ki chutney)


  • 4 tbsp green chutney(coriander mint chutney)


  • 1 tsp chat masala


  • 1 tsp lemon juice


  • 1/2 cups sev(for the garnish)


  • 2 tbsp chopped coriander(dhania)


  • 12-15 nos dates(de-seeded)(for sweet chutney (khajur imli ki chutney)


  • 1 tbsp tamarind(for sweet chutney(khajur imli ki chutney)))


  • 1-2 tbsp jaggery(for sweet chutney (khajur imli ki chutney))


  • 3/4 tsp red chili powder(for sweet chutney (khajur imli ki chutney))


  • 3/4 tsp chat masala(for sweet chutney (khajur imli ki chutney))


  • 1 tsp jeera,roasted and powdered(for sweet chutney (khajur imli ki chutney))


  • 2 tbsp salt and water to taste(for sweet chutney (khajur imli ki chutney))


  • 1/2 cups mint leaves(for green chutney (coriander mint chutney))


  • 1/2 cups coriander leaves(for green chutney (coriander mint chutney))


  • 4 nos green chilies(for green chutney (coriander mint chutney))


  • 1/2 nos onion(for green chutney (coriander mint chutney))


  • 3-4 nos garlic(for green chutney (coriander mint chutney))


  • 2 tsp chaat masala(for green chutney (coriander mint chutney))


  • 1/2 nos lemon(for green chutney (coriander mint chutney))


  • 2 tbsp salt and water to taste,(for green chutney (coriander mint chutney))

Directions

  • Arrange the puris on a serving plate.
  • Top each puri with a little potato and onion .
  • Top it with some khajur imli ki chutney and green chutney.
  • Sprinkle with chaat masala, lemon juice and salt on top.
  • Garnish with the sev and coriander.
  • Serve immediately.
  • Green chutney (Coriander mint chutney):Clean the leaves and chop the coriander with stem.Peel garlic and cube the onion.
  • Grind the leaves with green chilli,onion,garlic,chaat masala ,salt and little water to smooth paste.
  • Squeeze the juice from half of a lemon and mix well with spoon.
  • Enjoy with any chaat item !
  • sweet chutney (khajur imli ki chutney):Pressure cook the dates and tamarind with very little water upto 3 whistles and Cook dates and tamarind
  • Cool down and extract a thick juice from tamarind,grind the dates and little tamarind in to smooth paste..
  • Mix the tamarind extract,dates paste,jaggery,water and bring to boil.
  • Add red chillie powder,chat masala .
  • Add powdered jeera and Let the chutney be thick like the tomato sauce in consistency
