Preheat oven to 180c.
In a pan, add water, brown sugar and butter.
In a low flame heat until butter is melted and mixture starts to boil.
Add the flour and mix until there are no flour lumps and you can form a dough ball.
Cook the dough for 2-3 min in low heat. then take it off the heat and set aside.
In a bowl, combine eggs and vanilla and whisk together.
Add the egg mix into the dough part by part. Stir well until eggs are mixed well and mixture looks like mashed potatoes.
Transfer the dough to a piping bag fitted with a star nozzle.
Pipe dough into the prepared baking sheet. You can make churros of any shape.
Leave about 2 inches of space between the churros.
Bake for around 20 minutes or until it turns golden brown.
Once it's done turn off the oven and leave them inside the oven for 10 minutes to dry a little. (Or else churros will become flat and soft once they cool. )
Combine sugar and cinnamon powder.
Take the churros from the oven and dust the sugar-cinnamon mixture until well covered.
Do this when the churros are warm.
