Mix yeast,sugar and coconut water and blend it well, and keep it for fermentation for 4 hrs.
Crush grated coconut,shallots and garlic.
Add this mix to the rice powder and mix it well.
Mix kapp kachiyathu,fermented yeast mix and desired salt and mix well, add water if required.don't add too much water.
Keep it aside for 6 hrs.
Heat oil in dosa pan and pour this batter and make appam.
Serve hot.
NOTES: Kapp kachiyathu-Take 3 tsb rice powder and mix it water and heat it and make it like a thick gravy.
Coconut Water- add 1 pinch of sugar and yeast to a bottle of coconut water and keep it in refrigerator.
The correct main ingredient is toddy ,since we didn't used it,I used coconut water soured with the yeast.
