Ingredients

Serves : 2
  • 1 cups sugar


  • 1 1/2 cups water


  • 2 tsp cardamom powder


  • 6 nos egg whites


  • 3 tsp milk powder


  • 1 tsp maida


  • 2 ounces vanilla essence(optional)


  • 2 tbsp ghee

Directions

  • Heat the sugar and water along with little cardamom powder.This is the sugar mixture.
  • Separate the eggs into 2 separate bowls.Set aside the egg whites.
  • Make sure that there is no trace of egg whites in separated yolks,using the egg separator is best.Strain the yokes through a hole in dry thin paper to the sugar lotion.
  • Circle it roundly and take back within 1 minute. This is Muttamaala.
  • Mutta surka: Now for making the egg surkka, mix the left over sugar syrup,egg whites,cardamom powder,milk powder,maida and vanilla essence(optional) to mixer grinder and blend it well.
  • Spread ghee in a pan and pour this mixture to the pan .
  • Cover it with a foil paper and cook under lid for 20 minutes.
  • Egg surka is ready.
