Ingredients

  • 3 nos eggs


  • 2 nos chilly


  • 1 nos onion


  • 1 nos tomato


  • 1 sprig coriander leaves


  • 1/2 inch ginger


  • 1/4 tsp turmeric powder


  • 1/2 tsp red chilly powder


  • 1 tbsp oil

Directions

  • Finely chop the onion, chilli, tomato, ginger and coriander leaves.
  • Break and beat the eggs with salt. In a shallow frying pan, heat oil. Add the onions. When they are half cooked, add the green chili, tomatoes, ginger.
  • Add the spice powders. Fry till the tomatoes get soft and mushy.
  • Now add the beaten eggs. Stir the mixture. The eggs will start to cook. Keep on stirring.
  • Once the eggs are cooked and firm, remove from the pan. Garnish Egg Bhurji with coriander leaves.
  • Serve with toasted bread or with roti
