Ingredients

Serves : 1
  • 125 gms strong flour


  • 125 gms durum flour


  • 1/2 tsp salt


  • 45 ml olive oil


  • 125 ml tepid water(warm water)


  • 400 gms pumpkin


  • 10 ml oil


  • 1 nos egg yolk


  • 20 gms parmesan cheese


  • 1/8 tsp nutmeg


  • 25-50 gms bread crumbs


  • 400 gms for pumpkin filling: pumpkin


  • 10 ml oil


  • 1 tbsp seasonings for taste


  • 1 nos egg yolk


  • 20 gms parmesan cheese


  • 1/8 tsp nutmeg


  • 25-50 gms breadcrumbs


  • 30 gms preparation of blue cheese and cream sauce:butter


  • 100 ml milk


  • 125 gms blue cheese ,chopped


  • 125 ml cream


  • 30 gms parmesan grated


  • 1 tsp freshly ground black pepper to taste

Directions

  • Mix All the ingredients together to form a smooth dough. Cover the dough and keep it for 30 minutes. And roll out into a fine thin sheet and do as shown in the picture..
  • Preparation of Ravioli Fillings:-Filling can be prepared by any types of ingredients according to your preference.Here I prepared pumpkin filling
  • Preheat Oven to 200 *C. Cut the pumpkin into chunks,
  • Place pumpkin into a roasting pan and toss with the oil and seasonings,
  • Roast until tender and lightly browned . Allow to cool,
  • Blend pumpkin or put through a food mill or coarse sieve,
  • Add egg yolk, Parmesan, nutmeg, and enough crumbs to foam a semi-firm mixture.
  • Preparation of Tortellini:- Roll pasta dough thinly into a rectangle and cut it in half across the middle,
  • Lightly moisten one half-sheet by brushing the surface with a little water,
  • Pipe pea-or cherry-sized dots of chosen filling (can be varies according to your Tortellini size) in even rows into the moistened paste. Leave 2 cm between the edge of one dot and the next,
  • Carefully lay the remaining piece of rolled pasta dough over the filled sheet,
  • Moisten two edges with water and fold diagonally to form triangles, pressing together to squeeze out air pockets
  • shape two folded corners into a ring and press together as shown in the figure..
  • Poach gently for approximately 10 minutes,
  • Drain well and serve with sauce.
  • Preparation of Sauce.Blue cheese and cream Sauce:Melt butter in a pa
  • Add milk and blue cheese,
  • Stir while heating very gently without boiling to melt the cheese,
  • Add the cream and continue cooking for 3-5 minutes until sauce is lightly thickened,
  • Whisk the Parmesan into the hot sauce,
  • Stir the sauce into pasta. Add freshly ground black pepper to taste,
  • Finally serve immediately
