Ingredients

Serves : 6
  • 1 nos beetroot large


  • 2-3 nos carrot(cleaned and grated)


  • 1 cups grated coconut


  • 1/2 tsp turmeric powder


  • 1/2 tsp chilly powder


  • 2-3 nos green chilies


  • 2-3 nos pearl onions


  • 2 nos garlic colves


  • 3/4 tsp mustard seeds(seasoning)


  • 1-2 nos dried red chillies (seasoning)


  • 1 sprig curry leaves(seasoning)

Directions

  • Peel and grate the Beetroot & carrots and set aside
  • Crush the onions, garlic & green chillies, combine the grated coconut well with this mixture, turmeric powder and chilly powder. Mix well and set aside.
  • Heat oil in a deep frying pan, Splutter mustard seeds and add curry leaves & fry dried red chilies. Add the crushed coconut mixture and stir for a few seconds till the raw smell goes. Now add the finely chopped beetroot, carrot and enough salt. Mix well. Sprinkle a few drops of water and cover and cook till the vegetables are done. You don't need to add water if using really fresh vegetables as they contain water. Stir occasionally. Now open the lid and cook till the water, if any left, evaporates completely. Turn off the heat.
  • Tasty thoran is ready.
