Description

This is a combination of two very healthy and readily available vegetables. This is a vegetarian side dish and goes well with rice. This dish rolled in wholemeal chappathi makes a quick and healthy lunch. Broccoli Carrot combination is ideal for little fussy eaters at home, the vibrant colour of the dish can be appealing to little eyes. As mentioned before, Thoran is South Indian dish, a vegetarian fry in which grated & crushed coconut is added.

Ingredients

Serves : 1
  • 1 nos broccoli floret - medium one chopped


  • 2-3 nos carrots - cleaned and grated


  • 1/2 cups grated coconut


  • 1/2 tsp turmeric powder


  • 1 pinch chilly powder


  • 2-3 nos green chillies


  • 2-3 nos pearl onions


  • 2-3 nos garlic cloves,small


  • 3/4 tsp seasoning:mustard seeds


  • 1/2 tbsp dried red chilies


  • 1 sprig curry leaves

Directions

  • Chop the broccoli, grate the cleaned carrots.
  • Crush the onions, garlic & green chillies, combine the grated coconut well with this mixture, turmeric powder and chilly powder. Mix well and set aside.
  • Heat oil in a deep frying pan, Splutter mustard seeds and add curry leaves & saut? the dried red chilies. Add the crushed coconut mixture and stir for a few seconds till the raw smell goes.
  • Now add the finely chopped broccoli, carrot and enough salt. Mix well. Cover and cook till the vegetables are done. No water is required as there is adequate water content in both the vegetables. Stir occasionally. When almost cooked, open the lid and cook till dry. Remove from the oven, serve warm with rice.
