Ingredients

Serves : 1
  • 250 gms boneless chicken:breast


  • 2-3 nos green chilli depending on the heat level you need (i suggest to go a little beyond your normal level)


  • 1/2 nos coriander leaves,handful


  • 3-4 nos basil leaves


  • 1 sprig curry leaves


  • 1 tsp salt to taste


  • 1/4 tbsp turmeric powder


  • 1-2 drop olive oil


  • 1-2 tbsp lemon zest from a big lemon


  • 5 gms butter


  • 1/4 nos onion chopped(for green peas puree)


  • 2-3 nos garlic cloves(for green peas puree)


  • 1/2 tbsp cooking cream(for green peas puree)


  • 1/4 cups green peas boiled(for green peas puree)


  • 5 gms butter(for green peas puree)


  • 1 tsp salt to taste (for green peas puree)


  • 2 nos tomato boiled and slipped of the skin, blended and sieved(for tomato puree)


  • 1/2 tbsp brown sugar(for tomato puree)


  • 1 tsp salt to taste(for tomato puree)


  • 1/4 cups quinoa(for quinoa salad)


  • 1/3 cups kale finely chopped(for quinoa salad)


  • 1/3 cups carrots finely chopped(for quinoa salad)


  • 1/3 cups sweet corn finely chopped(for quinoa salad)


  • 1 tsp salt to taste (for quinoa salad)


  • 1/4 tbsp virgin olive oil (for quinoa salad)


  • 1/4 tbsp lemon juice(for quinoa salad)


  • 1/4 tbsp honey (for quinoa salad)

Directions

  • Grind well, make a paste out of all ingredients from Green Chilli Coriander Leaves Basel Leaves Curry Leaves Salt
  • Turmeric Powder together, add olive oil and mix well. Marinate chicken with the paste and add lemon zest to the chicken pieces. Keep it aside for minimum 30 minutes.
  • Melt about 5g of butter in a pan and shallow fry both sides of the chicken pieces in a low-medium flame.
  • Quinoa Salad
  • I made a very simple Quinoa salad to go along with the chicken.
  • Quinoa can be cooked in the similar way of cooking rice.
  • Prepare the salad dressing by mixing ingredients like Salt, virgin olive oil, lemon juice, honey together.
  • Mix ingredients like Quinoa Kale finely chopped, Carrots finely chopped, Sweet Corn finely chopped together and add the salad dressing.
  • Prepare the Green peas to puree using ingredients like Onion chopped, Garlic cloves, Cooking Cream, Green peas, boiled Butter, Salt to taste
  • Prepare the tomato puree using the ingredients Tomato boiled and slipped of the skin, blended and sieved, Brown Sugar, Salt to taste by reducing it into to a thick paste.
  • Serve the chicken with green peas puree, salad and tomato puree.
  • It has the heat from the chicken marinade, creamy, and bit sweetness from the puree, tanginess and sweetness from the salad and tomato puree.
