Ingredients

Serves : 4
  • 2 1/2 cups rolled oats


  • 1 cups mixed nuts & dry fruits(i used walnuts, peanuts, almonds, raisins, dates & small chocolate chips)


  • 1/4 cups shredded coconut


  • 2 tbsp brown bread


  • 1 pinch salt


  • 1 tsp vanilla extract


  • 1/3 cups honey


  • 1/3 cups canola oil/olive oil

Directions

  • Preheat the oven at 325 degrees F.
  • Prepare a baking dish (8 inch square) by lining it with parchment paper. Spray the parchment paper with cooking spray.
  • In a mixing bowl, add oats, mixed nuts and dry fruits, shredded coconut, brown sugar, salt and mix well.
  • Take another bowl and mix together canola oil, honey, vanilla extract and pour this to oats mixture. Mix everything really well. Transfer this oats mixture into the baking dish and spread out the mixture with a spatula. Lightly coat your hands with oil and press the mixture down firmly to make an even layer. If you are not compressing the mixture properly, granola bars will fall apart when you cut them.
  • Place the baking dish in the oven and bake 15-20 minutes or until dark golden on top.
  • Remove the granola from the oven and allow it to cool in the pan on a wire rack for 2 hours.
  • Transfer the granola onto a cutting board and slice it into bars. You can store this granola bars in an airtight container for up to a week.
