Serves 2

  • Basmati Rice (boiled & cooled) 4 cups

  • Boneless chicken shredded (boiled with little salt and black pepper powder) 1/2 cups

  • Finely chopped mixed vegetables(I used Carrot, French beans, Capsicum, Cabbage) 2 cups

  • Garlic,finely chopped 1 tbsp

  • Spring onion white chopped 3 tbsp

  • Spring onion greens chopped 2 tbsp

  • Egg 1 nos

  • Black Pepper Powder 1/2 tsp

  • Soy Sauce 1-2 tbsp

  • Salt to taste 1 pinch

  • Oil(I used olive Oil) 2 tbsp

    Heat oil in a wok, add garlic and spring onion white and saut? for a minute.

    Add mixed vegetables and saute for about two minutes on high flame. Place the vegetables to one side and make a space in the wok to scramble the egg. Add the beaten egg, salt, pepper powder and scramble it well, then mix together with vegetables.

    Add the shredded chicken and mix well.

    Add the boiled rice, soy sauce, black pepper powder and mix well and switch off the flame.

    Garnish with spring onion greens and serve hot.
