Ingredients

Serves : 10
  • 2 1/2 litre full fat milk


  • 1/2 kgs carrots (red ones) shredded


  • 1 cups sugar


  • 397 gms condensed milk(1 tin)


  • 1/2 cups khoya/mawa (optional)


  • 3 nos cardamom pods crushed


  • 1/3 cups almonds slivered


  • 1/4 cups walnuts slivered


  • 1/4 cups pistachios slivered


  • 1 1/2 cups boiled rice


  • 1/2 cups ghee


  • 1/2 tsp kewra essence

Directions

  • Bring milk to a rolling boil on a high heat.
  • After it starts boiling, lower the flame and allow it to simmer.
  • Now blend in that extra half a litre of milk and boiled rice until smooth in a blender.
  • Heat ghee in a pan and stir fry the shredded carrots until the raw smell fades away.
  • Add this to the boiling milk along with the cooked rice mix.
  • Cover and cook until tender and smooth without any lumps.
  • After the carrots and the rice mix is cooked, add in sugar or condensed milk.
  • Keep stirring in between so that it doesn't stick to the bottom.
  • After the desired consistency is achieved, add half of the slivered mixed nuts.
  • Top it with khoya.
  • And garnish with the remaining mixed nuts.
  • Chill it in the refrigerator for an hour or two.
  • Serve it chilled to your family and guests.
