Ingredients

Serves : 4
  • 1 nos romaine lettuce, heart chopped or torn pieces


  • 2 nos cucumber,cut into medium sized pieces


  • 1/2 cups cherry tomatoes


  • 1/2 cups red capsicum,diced


  • 1 nos scallions, chopped


  • 2 nos small round radishes ,thinly sliced


  • 6-8 nos mint leaves


  • 1 cups chick peas boiled


  • 1/2 cups arabic flatbread/ pita bread toasted


  • 1/4 cups for vinaigrette


  • 1 nos juice of lemon


  • 1 nos clove of garlic


  • 1 pinch salt


  • 1 tsp sumac


  • 2-3 tbsp extra virgin olive oil


  • 1 tsp pomegranate molasses (optional)

Directions

  • In a big salad bowl combine chickpeas, romain lettuce, cherry tomatoes, cucumbers, red capsicum, mint leaves, scallions and radishes
  • For the vinaigrette take lemon juice, garlic, salt, sumac, olive oi, pomegranate molasses (if using) in a small bowl and whisk till well combined.
  • Mix the vinaigrette into.the salad and toss
  • Just before serving toss the pita bread pieces into the salad
  • You may sprinkle some more sumac.
  • Serve at once and enjoy
