Carrots, diced and soaked in salt water for an hour 400 gms
Fresh fenugreek leaves ( methi leaves) 1 cups
Fresh green garlic ,finely chopped 1/4 cups
Spring onions , finely chopped 1/2 cups
Dry garlic cloves, finely chopped 4 nos
Fresh peas ,blanched 1/4 cups
Tomatoes, finely chopped 2 nos
Green chillies ,finely chopped 2 nos
turmeric powder 1/2 tsp
Coriander powder 1 tsp
Red chilli powder 1/4 tsp
Garam masala powder 1/4 tsp
Salt to taste around 1/2 tsp
Oil for cooking 2 tbsp
Heat oil in a pan and saute dry garlic lightly
Add the chopped fenugreek leaves and saute for a few seconds
Then add green garlic, spring onions, green chillies and carrots
Also.add the salt, turmeric powder, coriander powder, and red chilli powder. Give a nice stir.
Add the peas at this stage.
Cover and cook on medium to low flame.
Once the tomatoes become mushy and carrots are nearly done, add the blanched peas. Sprinkle garam masala powder.
Cover and simmer on low flame for 10 minutes.
Serve hot with bajra rotis or plain rotis
