Carrot and Herbs Stir Fry

Serves : 4
  • 400 gms carrots, diced and soaked in salt water for an hour

  • 1 cups fresh fenugreek leaves ( methi leaves)

  • 1/4 cups fresh green garlic ,finely chopped

  • 1/2 cups spring onions , finely chopped

  • 4 nos dry garlic cloves, finely chopped

  • 1/4 cups fresh peas ,blanched

  • 2 nos tomatoes, finely chopped

  • 2 nos green chillies ,finely chopped

  • 1/2 tsp turmeric powder

  • 1 tsp coriander powder

  • 1/4 tsp red chilli powder

  • 1/4 tsp garam masala powder

  • 1/2 tsp salt to taste around

  • 2 tbsp oil for cooking


  • Heat oil in a pan and saute dry garlic lightly
  • Add the chopped fenugreek leaves and saute for a few seconds
  • Then add green garlic, spring onions, green chillies and carrots
  • Also.add the salt, turmeric powder, coriander powder, and red chilli powder. Give a nice stir.
  • Add the peas at this stage.
  • Cover and cook on medium to low flame.
  • Once the tomatoes become mushy and carrots are nearly done, add the blanched peas. Sprinkle garam masala powder.
  • Cover and simmer on low flame for 10 minutes.
  • Serve hot with bajra rotis or plain rotis
