Ingredients

Serves 4

  • Carrots, diced and soaked in salt water for an hour 400 gms

  • Fresh fenugreek leaves ( methi leaves) 1 cups

  • Fresh green garlic ,finely chopped 1/4 cups

  • Spring onions , finely chopped 1/2 cups

  • Dry garlic cloves, finely chopped 4 nos

  • Fresh peas ,blanched 1/4 cups

  • Tomatoes, finely chopped 2 nos

  • Green chillies ,finely chopped 2 nos

  • turmeric powder 1/2 tsp

  • Coriander powder 1 tsp

  • Red chilli powder 1/4 tsp

  • Garam masala powder 1/4 tsp

  • Salt to taste around 1/2 tsp

  • Oil for cooking 2 tbsp

Directions

    Heat oil in a pan and saute dry garlic lightly

  • 02

    Add the chopped fenugreek leaves and saute for a few seconds

  • 03

    Then add green garlic, spring onions, green chillies and carrots

  • 04

    Also.add the salt, turmeric powder, coriander powder, and red chilli powder. Give a nice stir.

    Add the peas at this stage.

    Cover and cook on medium to low flame.

    Once the tomatoes become mushy and carrots are nearly done, add the blanched peas. Sprinkle garam masala powder.

    Cover and simmer on low flame for 10 minutes.

    Serve hot with bajra rotis or plain rotis
