  • Black Carrot 5-6 nos

  • Salt (you can increase or decrease according to your taste buds) 4 nos

  • Red chili powder coarse 1 1/2 tbsp

  • Mustard powder coarse 4 tbsp

    Scrub the carrots and wash them with running water.Peel and cut into batons .

  • 02

    Take carrot batons in a bowl or jar.Add salt,coarse red chili powder,mustard powder and mix.

    Add around 20 cups of water and stir.

  • 04

    Cover the jar with the muslin cloth and tie it around the rim and let it stand in the sun for 3 to 4 days.

  • 05

    After 3 days stir the kanji again and keep it in refrigerator and enjoy every sip of it.
