  • OATS - 1CUP


  • ROASTED RAGI POWDER -1 CUP


  • GREEN GRAM (soaked for 3hrs)-1/4 CUP


  • RICE FLAKES (soaked before 10min of grinding)- 1/4 CUP


  • WHEAT - 1/2 CUP


  • THINLY SLICED CARROT - 1 NO.


  • THINLY SLICED CAPSICUM - 1 NO.


  • THINLY SLICED CABBAGE - 3 LEAF


  • CHOPPED ONION -1 no.


  • EGG - 3 nos


  • PEPPER POWDER - 2 tspn


  • SALT - 2 tspn


  • GHEE 2 tblapn


  • OIL - 2tblspn


  • CORRIANDER LEAVES - 1 HANDFUL


  • MINT LEAVES -1 HANDFULL


  • CURRY LEAVES - 2 STRANDS


  • COCONUT -1 CUP


  • GREEN CHILLI -2 Nos.


  • GINGER -2 Ttblan


  • GARLIC - 2-3 CLOVES


  • LIME JUICE -1/2 lemon


  • GRATED CARROT - 1 nos

Directions

  • First we want to make ragi oats crepes. For that, we need to grind RAGI, OATS, GREEN GRAM and RICE FLAKES seperately.
  • Mix all the above items in a bowl
  • Add salt and mix well. Keep aside for 15-20 mins
  • For this time we can roast vegitables. For that, in a heatd pan add ghee and put all the veg except onion. Saute well for some second. add salt and half pepper powder. mix well and keep aside.
  • Now, heat a non-stick dosa pan. Take a ladle full of batter and pour it in the centre of the pan. Immediately, After pouring the batter, quickly start spreading from the centre in continues circular motion to form a thin crepes.
  • Drizzle few drops of oil on the top of the crepes at the centre and at the edge
  • Once the bottom of the crepes gets cooked, flip it over and cook for another few seconds. Take it off the pan
  • Make all crepes like this
  • In a large bowl, beat eggs along with onions, coriander leaves, green chillies, salt and pepper, keep it aside.
  • In the same pan, pour egg mixture and make omlet
  • Immediately, place one crepes on the top of the omlet and flip when cooked .
  • Remove it from pan. Make all omlete like this with crepes
  • On the top of the omlet, place roasted veggies one by one.
  • Then, roll the crepes. Place it in a serving plate
  • For Carrot chutney, In a mixi jar, add one cup of coconut, one handful of mint leaves corriander leaves. Crush them. Then add small piece of ginger, 2-3 cloves garlic, grated carrot, two strands of curry leaves, two green chillis and salt. Grind well. While grinding squeeze one lemon and mix well. TASTY CARROT CHUTNEY IS READY
  • Serve this healthy breakfast with carrot chutney
