Unsalted butter 1/2 cups
Vanilla Extract 1 tsp
FOR THE PECAN FILLING- flax meal 3 tbsp
Water (mix and rest for 15 minutes) 9 tbsp
Dark corn syrup 3/4 cups
Sugar 1/2 cups
Butter 1/4 cups
Pecans, roughly chopped 1 1/2 cups
Preheat oven to 350 F. Grease 8 inch round pan and line parchment paper and grease that too.
Grind the cookies into coarse powder, add melted butter and vanilla extract. mix until it looks crumbly which can easily be clumped together.
Press the mixture into prepared pan and bake for 10 minutes.
For the filling, combine all ingredients. Stir well.
Pour the filling over pie crust. Lastly top with some pecans if desired.
Bake until dark, thick and bubbly, about 50-60 minutes.
It will be liquidy until it cools. For a clean slice, refrigerate 1 hour.
