Pecan Pie With Honey Oatmeal Cookie Crust

Ingredients

Serves : 15
  • 6 nos for the crust- unibic honey oatmeal cookies (75 gm each packet)


  • 1/2 cups unsalted butter


  • 1 tsp vanilla extract


  • 3 tbsp for the pecan filling- flax meal


  • 9 tbsp water (mix and rest for 15 minutes)


  • 3/4 cups dark corn syrup


  • 1/2 cups sugar


  • 1/4 cups butter


  • 1 1/2 cups pecans, roughly chopped

Directions

  • Preheat oven to 350 F. Grease 8 inch round pan and line parchment paper and grease that too.
  • Grind the cookies into coarse powder, add melted butter and vanilla extract. mix until it looks crumbly which can easily be clumped together.
  • Press the mixture into prepared pan and bake for 10 minutes.
  • For the filling, combine all ingredients. Stir well.
  • Pour the filling over pie crust. Lastly top with some pecans if desired.
  • Bake until dark, thick and bubbly, about 50-60 minutes.
  • It will be liquidy until it cools. For a clean slice, refrigerate 1 hour.
