Choco Nut Cookie Cake With Vanilla Ice Cream

Ingredients

Serves 8

  • 1 1/4 cups all purpose flour

  • 1/3 cup white castor sugar

  • 1/3 cup light brown sugar

  • 1/2 tsp baking soda

  • 1/2 cup butter, room temperature

  • 1/4 cup milk

  • 15 gms dark chocolate, melted and cooled

  • 1/4 cup thick curd

  • 8 choco nut unibic cookies, coarsely broken

  • 250 gms vanilla ice cream

  • 1/4 cup semi-sweet chocolate chips

Directions

    Heat oven to 375 F.

  • 02

    Grease 8" round pan with butter and then lightly flour.

    Beat flour, sugar, baking soda, butter, milk, chocolate and curd with electric mixer on low speed for 1 minute, scraping sides occassionally.

    Stir in broken unibic cookies. Spread in pan.

    Bake 25 to 30 minutes or until cake springs back when touched lightly.

    Cool the cake completely on wire rack.

  • 07

    Top it up with vanilla ice cream dollops, chocolate chips, chocolate sauce and broken cookie pieces if desired.
