Choco Nut Cookie Cake With Vanilla Ice Cream

Ingredients

Serves : 8
  • 1 1/4 cups all purpose flour


  • 1/3 cup white castor sugar


  • 1/3 cup light brown sugar


  • 1/2 tsp baking soda


  • 1/2 cup butter, room temperature


  • 1/4 cup milk


  • 15 gms dark chocolate, melted and cooled


  • 1/4 cup thick curd


  • 8 choco nut unibic cookies, coarsely broken


  • 250 gms vanilla ice cream


  • 1/4 cup semi-sweet chocolate chips

Directions

  • Heat oven to 375 F.
  • Grease 8" round pan with butter and then lightly flour.
  • Beat flour, sugar, baking soda, butter, milk, chocolate and curd with electric mixer on low speed for 1 minute, scraping sides occassionally.
  • Stir in broken unibic cookies. Spread in pan.
  • Bake 25 to 30 minutes or until cake springs back when touched lightly.
  • Cool the cake completely on wire rack.
  • Top it up with vanilla ice cream dollops, chocolate chips, chocolate sauce and broken cookie pieces if desired.
