Ingredients

Serves 2

  • Flour 3 cups

  • Baking Powder 3 tsp

  • Margarine(softened) 1/2 cups

  • Grated Coconut 2-2 1/2 cups

  • Sugar(brown or granlated) 1 cups

  • Raisins 1 cups

  • Chopped Cherries 1/2 cups

  • Mixed Peel 1/2 cups

  • Mixed Spice 1 tsp

  • Milk or Water 3/4 cups

  • Egg,beaten 1 nos

  • Vanilla 1 tsp

  • Currants(optional) 1/2 cups

Directions

    Sift together flour and baking powder.

    Add margarine, coconut, sugar, raisins, cherries, mixed peel and spice; mix thoroughly.

    Combine milk, egg and vanilla.

  • 04

    Add liquid to dry ingredients and mix until all the liquid is incorporated. Do not knead.

    Pour into two 8½

  • 06

    Bake in a preheated oven at 325°F for 50-60 minutes or until tester comes out clean.

    Remove from oven and glaze with mixture of 1 tablespoon sugar and 1 tablespoon water.

  • 08

    Return to hot oven for 3-4 minutes.
