Ingredients

Serves : 8
  • 1 cups maida(all purpose flour) + for dusting


  • 1/2 tsp baking powder


  • 3/4 cups brown sugar(i used blue bird demerara sugar)


  • 1/3 cups oil/butter + for greasing


  • 1 nos large egg


  • 1 tsp vanilla essence


  • 1 tsp cinnamon powder


  • 2 tbsp milk


  • 4 nos whole walnuts,chopped

Directions

  • Grease a cake tin with butter and dust with some flour. Preheat the oven at 180C for 10minutes.
  • Meanwhile grind the brown sugar to fine powder. In a mixing bowl, take sugar.
  • Add oil/ butter and whisk it well.
  • Carefully break the egg and mix with sugar and oil. Does not require rigorous whisking.
  • Add vanilla essence and mix.
  • Sift maida, baking powder and cinnamon powder into the sugar egg mix.
  • Whisk everything gently, add milk to adjust consistency. Add 1/4 teaspoon salt and chopped walnuts. Mix well
  • Pour in the greased tin, tap twice to remove air bubble if any
  • Bake at 180C for 25-30 minutes or until the toothpick inserted in the centre comes out clean.
  • Serve warm with ice cream or black tea/coffee
