BLONDIES - BROWNIE WITHOUT COCOA

Ingredients

Serves 8

  • Maida(all purpose flour) + for dusting 1 cups

  • Baking Powder 1/2 tsp

  • Brown sugar(I used Blue Bird Demerara sugar) 3/4 cups

  • Oil/Butter + for greasing 1/3 cups

  • Large Egg 1 nos

  • Vanilla Essence 1 tsp

  • Cinnamon Powder 1 tsp

  • Milk 2 tbsp

  • Whole Walnuts,chopped 4 nos

Directions

    Grease a cake tin with butter and dust with some flour. Preheat the oven at 180C for 10minutes.

    Meanwhile grind the brown sugar to fine powder. In a mixing bowl, take sugar.

    Add oil/ butter and whisk it well.

    Carefully break the egg and mix with sugar and oil. Does not require rigorous whisking.

    Add vanilla essence and mix.

    Sift maida, baking powder and cinnamon powder into the sugar egg mix.

    Whisk everything gently, add milk to adjust consistency. Add 1/4 teaspoon salt and chopped walnuts. Mix well

    Pour in the greased tin, tap twice to remove air bubble if any

    Bake at 180C for 25-30 minutes or until the toothpick inserted in the centre comes out clean.

    Serve warm with ice cream or black tea/coffee
