**** This recipe require a Toaster Oven with bottom heating coil. **** YOU CAN AVOID COCOA POWDER, NUTS AND DATES SYRUP*****
Take 4 medium-large carrots and grate coarsely into shreds.
**DRY MIXTURE**
Take Maida (flour) , baking soda, cocoa powder, salt. Mix them together and then sift it.
**WET MIXTURE**
Powder the sugar, add oil and mix together in a mixer, add 3 eggs and then mix together for 2min, add vanilla essence, dates syrup, few dates, cinnamon nutmeg powder (made with 4-5 piece of cinnamon and 1/2 piece of nutmeg) and mix them together in a mixer at low speed till it becomes creamy.
**FINAL MIX**
Pour the wet mixture into a big mixing bowl, add the grated carrots into the wet mixture and mix it. Add Dry mixture into this and stir well with a spatula.
Add chopped dates, raisin and nuts and mix well.
VERY IMPORTANT POINT
*** This batter can make 2 cakes weighing half KG each, so divide the batter into 2 portions of similar quantity (2 1/2 cup of batter for 1 cake is the normal measure)***
Grease the pan (Cake pan with size 7-8 inch) with few drops of oil and some flour, lay butter paper and pour in the batter.
Preheat the oven for 5 min.
Bake in the Toaster oven for 35-40 min. on 180°c.
