Ingredients

Serves : 5
  • 10 nos unibic doosra jeera cookies


  • 1 cups besan/gram flour


  • 1/4 cups cornflour


  • 2 pinch asafoetida


  • 1/47 tsp red chili powder


  • 1 cups water


  • 1/4 tsp salt or to taste


  • 2 tbsp tomato ketchup


  • 2 cups oil for frying


  • 2 nos medium size boiled potatoes for the filling


  • 1 tsp green chilies finely chopped


  • 2 tbsp finely chopped cilantro/coriander leaves


  • 1 tsp ginger-garlic paste


  • 1 tbsp cashews coarsely broken


  • 1/4 tsp salt or to taste

Directions

  • Peel and mash the boiled potatoes when they are still warm.
  • Add the coriander leaves, green chillies, ginger-garlic paste, cashews, salt and mix well to form a dough.
  • In a mixing bowl, take the gram flour, corn flour, red chilli powder, asafoetida and salt and make a lump free batter with half cup of water.
  • The batter should neither be very thick nor too runny.
  • Add a few drops of oil to the batter and mix well.
  • Assembling and Frying the cookie pakode
  • Heat oil in a pan
  • Take 1 teaspoon of the mashed potato mixture and apply it on the unibic jeera cookie evenly.
  • Spread little tomato ketchup on the other unibic dusra jeera cookie and place it on top of the first jeera cookie.
  • Just slightly press the jeera cookie sandwich and dip it in the besan batter
  • Coat the entire stuffed cookie sandwich evenly with the besan batter.
  • Now slide in hot oil and fry the sandwich pakoda in batches of 2 or 3 on a medium flame till crisp and golden brown.
  • Drain on an absorbent paper.
  • Serve them hot or warm with orange mint coriander chutney or ketchup.
  • Enjoy the cookie Sandwich pakodas with your favorite masala chai or coffee.
