Ingredients
Serves 5
unibic doosra jeera cookies 10 nos
Besan/Gram Flour 1 cups
Cornflour 1/4 cups
asafoetida 2 pinch
Red Chili Powder 1/47 tsp
Water 1 cups
Salt or to taste 1/4 tsp
Tomato Ketchup 2 tbsp
Oil for Frying 2 cups
Medium size boiled potatoes for the filling 2 nos
Green Chilies Finely Chopped 1 tsp
Finely chopped cilantro/coriander leaves 2 tbsp
Ginger-Garlic Paste 1 tsp
Cashews Coarsely broken 1 tbsp
Salt or to taste 1/4 tsp
Directions
Peel and mash the boiled potatoes when they are still warm.
Add the coriander leaves, green chillies, ginger-garlic paste, cashews, salt and mix well to form a dough.
In a mixing bowl, take the gram flour, corn flour, red chilli powder, asafoetida and salt and make a lump free batter with half cup of water.
The batter should neither be very thick nor too runny.
Add a few drops of oil to the batter and mix well.
Assembling and Frying the cookie pakode
Heat oil in a pan
Take 1 teaspoon of the mashed potato mixture and apply it on the unibic jeera cookie evenly.
Spread little tomato ketchup on the other unibic dusra jeera cookie and place it on top of the first jeera cookie.
Just slightly press the jeera cookie sandwich and dip it in the besan batter
Coat the entire stuffed cookie sandwich evenly with the besan batter.
Now slide in hot oil and fry the sandwich pakoda in batches of 2 or 3 on a medium flame till crisp and golden brown.
Drain on an absorbent paper.
Serve them hot or warm with orange mint coriander chutney or ketchup.
