Brown sugar 200 gms
Water 180 ml
Hot Milk 60 ml
Butter 60 gms
Vanilla Essence 1 tbsp
Cinnamon stick 3 inch
Whole wheat flour 170 gms
Cocoa powder 15 gms
Purnes 150 gms
Large black raisins 50 gms
Vegetable oil 2 tbsp
Dates ( optional ) 75 gms
Baking powder 1 1/2 tsp
Baking soda 2 tsp
In a pan add brown sugar , prunes , large black raisins and dates. To this add water and butter . Drop one cinnamon stick with this.
Let them boil in slow flame for 20 minutes with continues stirring .
Continues stirring is required to avoid the brown sugar from catching up the bottom of the pan.
Once done remove from flame and let it cool
Now to this add vanilla extract and vegetable oil
Once cooled remove cinnamon stick and run through a sieve . Now make smooth paste of the left over in the sieve . Add it back to the liquid ingredients.
Now sieve the dry ingredients in a separate bowl .
The whole wheat flour , baking soda, Baking powder , salt and Cocoa powder.
Add the dry ingredients to the wet ingredients.Add milk at this stage hot milk.
Mix well and pour this to a greased baking loaf pan
Bake this in a preheated oven at 160°c for 45 minutes.
Once done , de-mold and let it cool completely.
Then slice and serve.
