Serves 6

  • All Purpose Flour 1/2 cups

  • Whole Wheat Flour 1/2 cups

  • Sugar 1/2 cups

  • Orange Juice 1/4 cups

  • Oil 1/4 cups

  • Baking Powder 1/2 tsp

  • Baking Soda 1/2 tsp

  • Thick Curd/Yoghurt 1/4 cups

  • Orange Zest 1 tsp

  • Vanilla Essence 1/4 tsp

  • For Orange Syrup: Orange juice 1/2 cups

  • Sugar 1/2 cups

  • Orange peel of orange cut into thin strips (scrap and take off the white segments from the peel) 1 nos

    Take the curd and baking soda in a bowl, stir well and make it smooth. Keep aside while you make ready the other ingredients.

    Sieve the flours and baking powder and keep aside.

    Add sugar and oil in the curd mixture and let sugar melt. Add the vanilla essence. Add the dry ingredients into it and make a smooth batter. Add the orange zest and mix gently.

    Grease a cake pan and preheat oven @180° for 10 mins.

    Pour the batter into the greased pan and bake for 35-40 mins. A toothpick inserted should come out clean.

    For orange syrup - In a sauce pan add the orange juice, sugar and thin orange strips and bring to boil. Cook till the Syrup thicken little bit for about 10-15 mins. Now take out 4-5 tbsp and let the remaining syrup thicken further till you get a thick syrup glaze like consistency.

    Use a toothpick to poke holes in the top of the cake, then pour the warm strained syrup all over the cake so that it soaks through.

    Use a spatula to spread the thick glaze over the top of the cake. Place cake on a serving platter, and arrange the orange strips, cut and serve.
