Ingredients

Serves 4

  • All Purpose Flour 120 gms

  • Cornflour 1 tbsp

  • Powdered Cane Sugar 100 gms

  • Oil (i used equal portions of melted butter and sunflower oil) 1/4 cups

  • Baking Powder 1/2 tsp

  • Baking Soda 1/2 tsp

  • Hing Curd(use fresh curd) 1/3 cups

  • Orange juice 1/2 cups

  • Orange Zest 1 tsp

  • Salt 1 pinch

  • Mixed Cranberries and prunes soaked in honey and brandy for a day 1/4 cups

  • All purpose flour for dusting the soaked fruits 1 tbsp

  • Vanilla essence 1 tsp

Directions

    Grease and line a cake loaf tin with butter paper

  • 02

    Sieve all purpose flour, cornstarch, salt, baking powder and baking soda

  • 03

    In a bowl add sugar and oil -butter .

    Beat till sugar is blended. Add juice and stir nicely but do not overmix

  • 05

    Now add sieved mixture, vanilla essence and orange zest

  • 06

    Mix the soaked cranberries and prunes with a little all purpose flour

  • 07

    Fold in this .fruits mixture with cake batter

  • 08

    Bake in a preheated oven at 180 degrees Celsius for 30 to 35 minutes.

    Insert toothpick to check if cake is baked

  • 10

    Cool cake, cut and enjoy
