Firstly soak all the fruits in rum minimum 24 hrs and keep in refrigerator.
In a bowl take hot water.
Add brown sugar and oil. Mix well and keep aside.
In a separate bowl sieve all the dry ingredients and add dry nuts.
Add vanilla essence and orange zest into wet ingredients.
Add flour mixture into the wet ingredients mix well and make smooth better.
Add soaked fruits and mix well.
Pour the better in greased cake tin.
Tap well to avoid air lumps.
Top with some cherries and cashews.
Bake at 160 degree for 45-50 minutes in preheated oven.
Check with a toothpick. If comes out clean your cake is ready.
Let it cool down completely. And serve.
