For crust, crush the unibic cashew cookies with butter and form wet sand like mixture.
Add this cookie mixture to the base of cake pan and press nicely to form smooth base.
Place in oven at 200°C for 10min.
Remove from oven and allow to cool.
Whisk cream cheese to remove lumps.
Add sugar, vanilla essence and lime juice.
And whisk.
Add egg and whisk for 2 min
Pour the batter over cooled crust.
Bake at 200°C for 40 min
Allow to cool in oven with door open.
Once cooled run knife through the sides of cake.
Take a cake board and invert the cheesecake.
Take another board and place the cheesecake with crust at bottom.
Whisk whipping cream and sugar.
Pipe whipping cream on the cake
Break unibic choco ripple cookies into 4 pieces.
Place over the cream.
Powder 1 choco ripple biscuit
Add this powder over the cake.
