  • All purpose flour (maida 1 1/4 cups

  • Soda Bi carbonate 1/2 tsp

  • Baking Powder 1 tsp

  • Brown Sugar 1/2 - 3/4 cups

  • Butter,Softened 85 gms

  • Whisked yoghurt, room temperature 1/2 cups

  • Hot milk 1/4 cups

  • Vanilla Essence 1/2 tsp

  • Lemon juice 1 tsp

  • Sugar 1/2 cups

  • Water 1 tsp

  • Warm Water 2 tsp

  • Mixed Dry Fruits 1 3/4 cups

  • Orange /Apple Juice 1 cups

  • For spice powder- cloves,cardamom, cinnamon -small piece 1-2 nos

  • Grated Lemon Peel 1 tsp

    Sift together all purpose flour, baking powder and soda bicarbonate. Using manual whisk combine softened butter and brown sugar till light and fluffy. Add hot milk, yoghurt and vanilla essence and mix well. Fold in the stiffed flour in two batches.

    Soak the fruits overnight in orange juice.

    Preheat oven@180C, 10 minutes before baking

    Just before baking the cake drain the fruit and keep aside.Grind together cloves, cinnamon and cardamon with a tsp of sugar and keep aside.In a pan mix sugar and 2tsp water and heat well till it caramalise.Then coolit by adding half cup water.

    Coat the drained fruits and orange peel with 1 tsp flour before adding to batter. Fold the drained fruits and spice powder and caremel surup the wet ingredients together.

    Grease and line a cake tin with baking paper. Pour the batter into the prepared pan. Bake the cake in the preheated oven for 50 minutes till a toothpick inserted comes out clean.
