All purpose flour 2 1/2 cups
Butter(unsalted) 1/2 cups
Refined Oil 2/3 cups
Eggs 2 nos
Sugar 1 cups
Baking powder 2 tsp
Salt 1/8 tsp
Instant coffee powder 2 1/2 tsp
Water 1/2 cups
Boil water and add it into instant coffee powder (11/2 teaspoon) to make decoction. Stir well and allow it to cool.
Preheat the oven at 160 degree C for 10 minutes.
Line a loaf tin with a butter paper and keep aside.
Sift flour, salt, baking powder and 1 teaspoon coffee powder altogether and keep aside.
Take butter and oil in a bowl and add sugar into it.
Cream the mixture until the sugar dissolves.
Now add one egg at a time and beat well. You may add few drops of vanilla essence however I avoided it.
After that fold the dry flour mixture with the wet mixture along with the addition of coffee decoction.
Do not add too much of coffee decoction so that the batter loses it consistency and become watery.
Now add the batter in the loaf tin and bake in a preheated oven for 30 to 40 minutes (160 degree C) or until the tooth pick comes out clean.
Allow it to cool and later slice it and serve.
