Grease the ramekins with butter and dust with flour.
In a deep pan add water until half and bring it to simmer.
Break the chocolate into a heatproof bowl along with the butter and place over the pot with simmering water.
Stirring occasionally,heat them until just melted. Now set this aside to cool a bit.
Sift flour,salt together into a seperate bowl and set them ready.
Crack the eggs into another bowl and add sugar.
Whisk the eggs and sugar until well combined.
Now combine the butter chocolate mixture with the beaten eggs.
Add the sifted flour in intervals to this and fold until combined.
Flour should be well incorporated without any lumps.
Divide the mixture between the greased and floured moulds.Shake to level out the batter.
Wrap with cling film and freeze the moulds for two hours.
Preheat the oven to 180°C. Place the frozen desserts on a baking tray and bake for 15 minutes.
Remove the lava cakes from the oven and leave at room temperature for 2 minutes to rest. Carefully turn out onto a serving plate, top with a little drizzle of the coulis/chocolate sauce.
The oozing lava..yumm!
Decorate with a few sliced berries and and serve them immediately.
