Ingredients

  • Maida/All Purpose Flour 1 cups

  • Dried Cranberries 1/4 cups

  • Butter,room temperature 50 gms

  • Sugar 1 cups

  • Curd 3 tsp

  • Baking powder 1 tsp

  • Baking soda 1/4 tsp

  • Vanilla Essence `1/2 tsp

  • Milk 1/3 cups

  • Lemon Zest of lemon 1 nos

  • Confectioners sugar 1/2 cups

Directions

    In a mixing bowl add the sugar and butter and stir till both dissolves completely. Add the curd and whisk nicely till smooth. Add the vanilla essence, milk, half of lemon zest, half of lemon juice and stir well. (Reserve some lemon juice and zest for the glaze)

    In a small bowl take some flour and add the cranberries and mix well and dust it nicely. This is to prevent it from floating at the bottom.

    Sieve the flour, baking powder and baking soda. Add them to the wet ingredients. Mix gently to make a smooth batter. Add the Cranberries and stir gently.

    Preheat the oven to 180° C for 10 mins and grease the cake pan with butter.

    Pour the batter into it. Bake the cake for 40-45 mins. Start checking from 35 mins. A tooth pick inserted should come out clean.

    Remove from the oven, let it cool down completely.

    Meanwhile prepare the glaze. Add the confectioners sugar in the remaining lemon juice and zest and stir well till smooth. If required add some more lemon juice or water. Add few drops of vanilla essence.

    Once the cake cools down, invert, pour the glaze over the cake, let it set for 10-15 mins, cut and serve.
