Ingredients

Serves 4

  • Brinjal,small 4 nos

  • Olive oil 4 tbsp

  • Onions,medium size finely chopped 3 nos

  • Tomato,medium size finely chopped 4 nos

  • Salt 1 1/2 tsp

  • Curry Leaves 1 sprig

  • Powdered coriander seeds 3 tsp

  • Powdered fennel seeds 2 tsp

  • Red chilli( degi mirch) 1 tsp

  • pav bhaji masala 1 tsp

  • Garam masala powder 1/2 tsp

  • turmeric powder 1/2 tsp

  • Cumin Seeds 1/4 tsp

  • Mustard Seeds 1/4 tsp

  • Coriander leaves,Handful,finely chopped 1 nos

  • For stuffing- Peanut 4 tbsp

  • Coconut 2 tbsp

  • Fennel seeds 1 tbsp

  • Coriander Seeds 2 tbsp

  • Salt 1 tsp

  • chat masala 1/2 tsp

Directions

    Roast and powder all the ingredients of stuffing and keep aside

  • 02

    Wash and cut brinjals with one end of the brinjal and stalk leaving intact

  • 03

    Wash and immersed brinjals in salted water till use

  • 04

    Stuff all the brinjals with stuffing masala

  • 05

    Take a wok .put one tablespoon olive oil and roast brinjals

  • 06

    Keep roasted brinjals aside

  • 07

    Now in a wok put remaining olive oil and splitter mustard and cumin seeds and add curry leaves

  • 08

    Now add chopped onions and saute till little brown .then add tomatoes and saute for 4-5 minutes

    Add all the spices of curry and saute for one minute

  • 10

    Add watee till your desired consistency of gravy

  • 11

    Add brinjals and cook till tender on low flame

  • 12

    Switch off the flame and add coriander leaves.curry is ready
