Roast and powder all the ingredients of stuffing and keep aside
Wash and cut brinjals with one end of the brinjal and stalk leaving intact
Wash and immersed brinjals in salted water till use
Stuff all the brinjals with stuffing masala
Take a wok .put one tablespoon olive oil and roast brinjals
Keep roasted brinjals aside
Now in a wok put remaining olive oil and splitter mustard and cumin seeds and add curry leaves
Now add chopped onions and saute till little brown .then add tomatoes and saute for 4-5 minutes
Add all the spices of curry and saute for one minute
Add watee till your desired consistency of gravy
Add brinjals and cook till tender on low flame
Switch off the flame and add coriander leaves.curry is ready
