Ingredients

Serves 2

  • Cooked rice 1 1/2 cups

  • Oil 1 tsp

  • Ghee 1 tsp

  • Cashews 3-4 nos

  • Raisins 8-10 nos

  • Cumin Seeds 1 tsp

  • Onion,finely chopped 1 nos

  • Green Chilies,chopped 2 nos

  • Grated Caroot 3/4 cups

  • Garam Masala 1/2 tsp

  • Salt as per taste 1/2 tsp

  • Chopped fresh fenugreek leaves 3/4 cups

  • Chopped coriander leaves 1 tbsp

Directions

    heat oil and ghee in a pan

  • 02

    fry cashews till brown, then remove into a bowl

  • 03

    fry raisins in the same way

  • 04

    in the same pan, add cumin seeds

  • 05

    when it starts crackling add onion and green chillies

  • 06

    saute until lightly browned

  • 07

    now add carrots

  • 08

    sprinkle salt and garam masala powder

  • 09

    saute for 3-4 minutes

  • 10

    next add fenugreek leaves and mix nicely

  • 11

    saute till it shrinks and raw taste of carrots and fenugreek leaves goes

    add cooked rice, fried cashews, raisins and mix well

  • 13

    add coriander leaves and switch off the flame

  • 14

    relish the tasty rice as such or with raita
