Ingredients

Serves : 2
  • 1 1/2 cups cooked rice


  • 1 tsp oil


  • 1 tsp ghee


  • 3-4 nos cashews


  • 8-10 nos raisins


  • 1 tsp cumin seeds


  • 1 nos onion,finely chopped


  • 2 nos green chilies,chopped


  • 3/4 cups grated caroot


  • 1/2 tsp garam masala


  • 1/2 tsp salt as per taste


  • 3/4 cups chopped fresh fenugreek leaves


  • 1 tbsp chopped coriander leaves

Directions

  • heat oil and ghee in a pan
  • fry cashews till brown, then remove into a bowl
  • fry raisins in the same way
  • in the same pan, add cumin seeds
  • when it starts crackling add onion and green chillies
  • saute until lightly browned
  • now add carrots
  • sprinkle salt and garam masala powder
  • saute for 3-4 minutes
  • next add fenugreek leaves and mix nicely
  • saute till it shrinks and raw taste of carrots and fenugreek leaves goes
  • add cooked rice, fried cashews, raisins and mix well
  • add coriander leaves and switch off the flame
  • relish the tasty rice as such or with raita
