Ingredients

Serves : 3
  • 1 cups for dough:whole wheat flour


  • 1 tsp clarified butter


  • 1/2 tsp salt


  • 1/2 cups water or as required


  • 2 tsp for stuffing:oil


  • 1/4 tsp asafoetida


  • 1/4 tsp cumin seeds


  • 1/4 tsp carrom seeds


  • 1/2 cups sprouted green gram/moong


  • 1 inch ginger chopped


  • 1 nos green chilli chopped


  • 1 nos carrot grated,medium


  • 1 nos small onion chopped


  • 1/2 tsp salt or as per taste


  • 1/4 tsp garam masala powder


  • 1/4 tsp chat masala


  • 3-4 tbsp oil for frying paratha

Directions

  • make a smooth dough out of wheat flour, salt, ghee and water
  • keep aside for half an hour
  • roughly crush the sprouts, ginger and green chilli together
  • heat oil in a pan
  • add cumin seeds, asafoetida and carom seeds
  • add onion and saute until it becomes transparent
  • add carrot and cook properly
  • now add salt, chat masala, garam masala and sprouts
  • mix well
  • cover with a lid and cook for a minute
  • switch off the flame and keep aside
  • make medium sized balls from the dough
  • flatten them into small circles with the rolling pin
  • drop enough stuffing and cover the stuffing by sealing the edges of the dough
  • dust with flour and roll them gently into parathas
  • heat a tawa and place the paratha
  • drizzle oil and cook the paratha on both sides
  • serve hot with chutney or pickle
