Ingredients

Serves 3

  • For dough:whole wheat flour 1 cups

  • Clarified butter 1 tsp

  • Salt 1/2 tsp

  • Water or as required 1/2 cups

  • For stuffing:Oil 2 tsp

  • Asafoetida 1/4 tsp

  • Cumin seeds 1/4 tsp

  • Carrom seeds 1/4 tsp

  • Sprouted green gram/moong 1/2 cups

  • Ginger chopped 1 inch

  • Green chilli chopped 1 nos

  • Carrot grated,medium 1 nos

  • Small onion chopped 1 nos

  • Salt or as per taste 1/2 tsp

  • Garam masala powder 1/4 tsp

  • chat masala 1/4 tsp

  • Oil for frying paratha 3-4 tbsp

Directions

    make a smooth dough out of wheat flour, salt, ghee and water

  • 02

    keep aside for half an hour

  • 03

    roughly crush the sprouts, ginger and green chilli together

  • 04

    heat oil in a pan

  • 05

    add cumin seeds, asafoetida and carom seeds

  • 06

    add onion and saute until it becomes transparent

  • 07

    add carrot and cook properly

  • 08

    now add salt, chat masala, garam masala and sprouts

  • 09

    mix well

  • 10

    cover with a lid and cook for a minute

  • 11

    switch off the flame and keep aside

  • 12

    make medium sized balls from the dough

  • 13

    flatten them into small circles with the rolling pin

  • 14

    drop enough stuffing and cover the stuffing by sealing the edges of the dough

  • 15

    dust with flour and roll them gently into parathas

  • 16

    heat a tawa and place the paratha

  • 17

    drizzle oil and cook the paratha on both sides

  • 18

    serve hot with chutney or pickle
