Prepare the Dressing : Whisk together the garlic, mustard, vinegar, lemon juice, honey, hot sauce, salt, and pepper in a large bowl. Slowly whisk in the olive oil until the dressing is emulsified. Alternatively, you can combine all the ingredients in a blender or a food processor and puree until smooth.
Wash and dry kale leaves. Using a sharp knife, cut away the hard core on each leaf. Then, slice into thin stripes.
Place all the salad ingredients into a large bowl and add the dressing. Toss all the ingredients together until well combined.
If making it ahead of time, add the dressing just before serving.
