Ingredients

Serves : 4
  • 1 nos leafy kale,small bunch


  • 2 nos red apple,diced


  • 1 cups pomegranate seeds


  • 1/2 cups red onion chopped


  • 1/3 cups pecans,chopped


  • 1 nos garlic clove,finely chopped


  • 2 tbsp dijon mustard


  • 1/4 cups champagne vinegar


  • 2 tbsp fresh lemon juice


  • 2 tbsp honey


  • 2 tsp hot sauce


  • 1/2 tsp salt


  • 1/2 tsp ground pepper


  • 1/4 cups extra virgin olive oil

Directions

  • Prepare the Dressing : Whisk together the garlic, mustard, vinegar, lemon juice, honey, hot sauce, salt, and pepper in a large bowl. Slowly whisk in the olive oil until the dressing is emulsified. Alternatively, you can combine all the ingredients in a blender or a food processor and puree until smooth.
  • Wash and dry kale leaves. Using a sharp knife, cut away the hard core on each leaf. Then, slice into thin stripes.
  • Place all the salad ingredients into a large bowl and add the dressing. Toss all the ingredients together until well combined.
  • If making it ahead of time, add the dressing just before serving.
  • Tasty and healthy kale pomegranate salad that not looks good but tastes really good too !
