Ingredients

  • 100 gms all purpose flour


  • 50 gms sugar


  • 1 tsp baking powder


  • 1/2 cups coconut oil


  • 3/4 cups thick coconut milk


  • 1/2 cups passion fruit juice


  • 1 tsp corn flour


  • 1/2 cups whipping cream


  • 2 tbsp passion fruit juice


  • 2 drop orange food colouring


  • 2 drop green food colouring

Directions

  • preheat the oven to 170 degrees celsius and line a Muffin tray with paper cups
  • whisk together flour and baking powder and seive it and keep aside
  • mix together coconut oil coconut milk and sugar
  • Fold the dry ingredients in to the wet ingredients
  • fill the Muffin liners three fourth with the batter
  • bake for 15 minutes or until done
  • mix the corn flour in a little bit of passion fruit juice
  • boil the remaining juice and the corn flour mixture until it thickens
  • remove from heat
  • whip the cream and add in the passion fruit juice as required and also the colours in separated creams
  • core the centre of the cupcakes
  • fill in with the passion fruit sauce
  • Frost it with the whipped cream
