Grain Free Cauliflower Rice

  • 1 nos medium size cauliflower

  • 1 nos medium size onion

  • 1 nos small size tomato

  • 1/2 nos medium size capsicum

  • 3 tbsp paneer ( cut in small pieces and shallow fry in butter)

  • 2 tsp vinegar(to clean cauliflower)

  • 3 tsp olive oil

  • 2 tbsp coriander leaves

  • 1 1/2 tsp chopped,green chili

  • 1/2 tsp oregano

  • 1 tsp salt

  • 1/2 tsp red chili powder


  • Cut cauliflower in small pieces and soak them in vinegar mixed warm.water for ten minutes
  • Grate cauliflower in food processor
  • Add little salt in grated cauliflower and microwave it for two minutes at high
  • After cooling squeeze cauliflower properly to remove all water
  • Heat a pan and add olive oil
  • Shallow fry paneer and keep aside
  • Now saute onion tomato capsicum and green chilli in olive oil at high flame for one can take more time but i like crunchy vegetables so i took little time
  • Now add salt red chilli and oregano
  • Add cauliflower and saute
  • I like crunchy cauliflower so i saute at high flame without lid but if you like tender then cook with lid at low flame
  • Your grain free diabetic friendly cauliflower rice are ready
